É realmente algo chato abrir o Notepad++ e ter todas as abas utilizadas anteriormente, alem dos erros que isso pode gerar alterando um documento fofo que já está quietinho.
Então pesquisei e olha a config ai:
Settings->Preferences
Click on the "MISC" tab.
Uncheck the option on the bottom left: "Remember current session for next launch"
